Weekend Herb Blogging - Gazpacho!

Gazpacho may be called as a 'Summer Soup', but for me, its something I can have throughout the year.. any time... the reason being, it is filled with nutrients.. one made with fresh vegetables and nothing else...:)

There are different versions for this Spanish soup.. but the basic essentials which form the crux remain the same. You can eye ball the measurements and trust me, for any amount of veggies you ought to add, it will taste equally good and yummy..:D.. According to me, using big, fat, ripe tomatoes makes all the difference...and one can make it juicy, a bit chunky or blended..I usually like it a bit chunky, but I tried the blended version.. and it came out really well..!!



Here is my version of Gazpacho soup and off it goes to Kalyn's Weekend Herb Blogging, this week hosted by lovely Anna!



Preparation Time: 15 - 20 minutes
Serves: 8

Ingredients:

6 Ripe tomatoes - peeled and chopped
1 Onion, finely chopped
1 Cucumber - peeled, seeded, chopped
1 Bell pepper - seeded and chopped: I used Green!
2 stalks of Celery, chopped
1-2 Tbsp chopped fresh Coriander
1 clove Garlic, minced
1/4 cup (Red wine) vinegar
1/4 cup( olive) oil
2 Tbsp Fresh lemon juice
2 teaspoons sugar
Salt & Pepper
1 cup of Tomato/Vegetable juice

How to make:

1. Combine all the ingredients one by one in a blender.
2. Blend it to the desired consistency.
3. Pour the mixture in a air-tight storage container and refrigerate overnight.
4. Serve chilled or at normal room temperature!

I made Gazpacho last Summer, I love it on a hot day too. Great entry Siri. Enjoy the weekend. There must be Republic day celebration in Raleigh, right? Enjoy!:)

One of my dad's favorite dishes is gazpacho, and this brought back very fond memories. I'll add it to my list for when we again have ripe tomatoes.
