Today's recipe, my friends is a winsome tribute for a lazy or super-busy days. Cooking pasta is the only time consuming part in this super simple delightful pasta dish. :-)
It was a clear, cold, wintery night with stars piercing through the sky when I came home very late and very hungry. With an empty fridge, all I could find was a fistful of pasta and few herbs in my tiny balcony garden. Pasta is a weakness of mine and always make sure I have atleast one or two types in my cupboard. As I freshened up myself, the pasta was done, drained and lightly tossed in olive oil to avoid sticking. A generous splash of olive oil went into a hot pan with some garlic and breadcrumbs, toasted for few mins. In went the pasta with salt, pepper and herbs. Within a blink of an eye, my late night meal was ready and by the end it left me with a smiling face and happy, full tummy. Doesn't this sound much better than a greasy, soggy pizza which we tend to think at such busy nights. Next time, make some of this pasta and see how much difference a handful of ingredients can make. Enjoy!
