[VeganMoFo 2013] Spaghetti with Breadcrumbs, Garlic and Olive Oil


Today's recipe, my friends is a winsome tribute for a lazy or super-busy days. Cooking pasta is the only time consuming part in this super simple delightful pasta dish. :-)



It was a clear, cold, wintery night with stars piercing through the sky when I came home very late and very hungry. With an empty fridge, all I could find was a fistful of pasta and few herbs in my tiny balcony garden. Pasta is a weakness of mine and always make sure I have atleast one or two types in my cupboard. As I freshened up myself, the pasta was done, drained and lightly tossed in olive oil to avoid sticking. A generous splash of olive oil went into a hot pan with some garlic and breadcrumbs, toasted for few mins. In went the pasta with salt, pepper and herbs. Within a blink of an eye, my late night meal was ready and by the end it left me with a smiling face and happy, full tummy. Doesn't this sound much better than a greasy, soggy pizza which we tend to think at such busy nights. Next time, make some of this pasta and see how much difference a handful of ingredients can make. Spaghetti with Breadcrumbs, Garlic and Olive Oil (Download and Print Recipe)

Adapted from How to Cook Everything Vegetarian, Mark Bittman
Serves 2
Cook Time: 15 to 20 mins

Ingredients:

1 fistful of long, thin pasta like linguine or spaghetti
salt and pepper to taste
3 tbsp extra virgin olive oil
1 garlic, crushed and minced
1/4 cup or more bread crumbs
few pinches of red pepper flakes
chopped coriander or parsley leaves for garnishing

Preparation:

1 - Bring a large pot of water to boil and salt it. Add pasta and cook until tender but not mushy. (follow the package instructions). Drain it, reserving few tbsp of cooking water. Add a few drops of olive oil and gently toss. Cover and set aside.

2 - Heat rest of olive in a pan and add garlic with a large pinch of salt. Once its starts to sizzle, add bread crumbs and red pepper flakes. Saute for few mins until the crumbs are toasted. Add cooked pasta and few tsp of pasta cooking water to moisten or more olive oil. Toss everything together. Adjust seasoning. Garnish with herbs and Serve.
