Balancing work and umpteen number of things I wish to do (like zentangle, reading) AND eating healthy food is becoming increasingly challenging. When I read some of my older posts, it shows how I have eveolved over time as a person and when I start to write about my amma's recipes, I get a feeling that am unfolding a culinary legacy for me and for many generations to come. [Perfect Sunday Breakfast] Black Current Jam French Toast Recipe


It's Sunday today and we are making french toast. yes, that egg-y bread lightly fried in butter and there are plans to make it even better by topping it with some jam-y goodness. The ingredients that you need to make a french toast are quite simple. I have tried a spicy, savoury version many times before but today's recipe kicks that out of the window to become my hot favorite way to eat breakfast, any day, any time!.

Under 15 mins: {Recipe} Margherita Tortilla Pizza - Step by Step Pictures

I would like to change the above quote a little. There is no better felling to have a simple home-made pizza and with an heavenly combination of flavors such as - Tomato, Cheese and Basil.

Both myself and TH long for such quick meals to satiate our midnight cravings especially for italian food. Here is a quick recipe idea for peeps like us - Margherita Tortilla Pizza.

Some more quick and easy recipe ideas - Lemon flavored Rice Noodles, Baked Potato Spinach Corn Tikkis, Sweet Corn Sundal, Under 15 mins Tofu Makhani, Bombay French Toast, 2-minute Pineapple Dessert


It takes less than 15 mins to put together and when served with a salad or sandwich on the side it becomes a complete meal. No one can eat just one of these. I can guarantee you that as my parents who are very picky eaters themselves, especially when it comes to Italian cuisine asked me to make a third helping of these cuties.

These are just irresistible.

four basic ingredients along with some tortillas & tomato sauce. you are good to go!

{Recipe} Margherita Tortilla Pizza


Ingredients:

4 tortillas
1/2 cup olive oil
few slices of tomato
basil leaves, shredded
1/2 cup grated mozzarella cheese
1 cup home made or store bought tomato sauce

Preparation:

1) Preheat oven to 190 C or 375 F. Brush olive oil on both sides of tortilla and prick lightly with fork. Bake for 2 minutes per each side.


2) Spread some tomato sauce (home made or store bought) on the baked tortilla.


3) Place few tomato slices and sprinkle with grated cheese.


4) Top with some shredded basil leaves. Bake for 5-6 mins until cheese melts and the bottom is crispy.


5) Slice and eat.

quick,easy and delicious way to curb those pizza cravings!

Under 15 minutes: {Recipe} Easy Spaghetti with Tomato Sauce and Fried Egg

 
Today is Saturday. a self-declared do-nothing day. a day usually spent with a book in hand and definitely not a day where I cook something, photograph and share here on the blog.

But today is different.

I just couldn't resist from posting this quick, utterly, buttery recipe - pasta with tomato sauce and fried egg on the side, a combination made in heaven. literally.



{Recipe} Easy Spaghetti with Tomato Sauce and Fried Egg

Serves 1

Ingredients:

1 fistful of spaghetti
1 tbsp butter
1/2 cup (or more, based on how tomatoe-y you want) home made tomato sauce (or) store-bought tomato sauce
few red pepper flakes
handful of frozen peas, microwaved for 2 minutes
1 egg
1/2 tbsp dried basil leaves + 1 tsp to sprinkle on the fried egg (if desired)
salt - to taste

Preparation:

1. Boil water and add salt to it. Add spagetti and let it cook al dente. Mine was done in 8-9 minutes. Drain. Keep aside.

2. Meanwhile melt butter in a pan and add tomato sauce and peas. Cook for 2 minutes and add cooked spaghetti. Crush basil leaves between your palms and sprinkle on pasta with few red pepper flakes. Mix gently.

3. Heat a pan, add a wee bit of butter or oil, break an egg, sprinkle some salt and basil leaves.

Serve pasta piping hot with fried egg on the side. Yum Yum! This definitely made my day with its simplicity and deliciousness. :-)

A Taste of Yellow: Caramelized Bananas with Toffee Sauce

Each one of us has an ever-growing wishlist filled with dreams, with a hope that they will be fulfilled, become a reality some day. But, sooner or later we realize that some day is just an illusion. We need to first understand and learn to live today - to the fullest.

Barbara of Winos and Foodies had a wishlist too. To eat her 87th Birthday Cake. It was the year 2004 when she was diagnosed with cancer. She started her blog as a distraction and she has lighten up the blogging world with her ever inspiring, beautiful and personal blog posts. I knew her only through the "Taste of Yellow", a popular event which coincides with LiveStrong Day, created by cancer survivor Lance Armstrong's LiveStrong Foundation to raise awareness of cancer. With a heavy heart, I say - Barbara lost her long battle with cancer on June 29th 2012. 

My deep felt condolences to the family and May God rest her soul in peace.


In memory of Barbara, Meeta and Jeanne dedicated this month's Monthly Mingle to "A Taste of Yellow" - Bake or make something yellow. and I choose a super simple recipe - Caramelized Bananas with Toffee Sauce which can be put together in less than 15 minutes.

Caramelized Bananas with Toffee Sauce




{Recipe} Caramelized Bananas with Toffee Sauce

Adapted from Taste.com.au

Serves 4

Ingredients

2 tbsp butter
4 bananas, peeled, halved lengthways
1/2 cup firmly packed brown sugar
2 tablespoons thickened cream

Preparation

1. Melt butter in a large, non-stick frying pan over medium-high heat. Add banana slices. Cook, turning occasionally, for 5 minutes or until lightly browned. Transfer to a plate. Cover with foil.

2. Add sugar to pan. Cook, stirring, for 2 to 3 minutes or until sugar has dissolved. Add cream. Cook, stirring, for 2 minutes or until combined. Place bananas on serving plates. Drizzle some toffee sauce.
Serve remaining sauce on the side.

Note: This toffee sauce is so versatile that it can be used as a topping on anything & everything - cakes, cookies, muffins, scones, oatmeal etc.

Kolhapuri Teekha Aloo (Spicy Potatoes With Kolhapuri Spice paste) #FoodieExchange

I love surprises, especially when it involves 'food'.

Last month, a "FoodieExchange" was organised by Charis of Culinary Storm where each of the participating bloggers from different parts of India are paired together and send each other a goodie bag filled with little surprises.

...and here what I received from "the moody foodie" (jeetendra), a blogger from Maharashtra.

I quite liked the taste of "kolhapuri thecha" and today's recipe is the simplest way to make use of it - with potatoes and spring onions added for a herby feel. This paste so versatile that am sure it can be used in every and anything. - even in these, to add a spicy, indianized note. I can't wait to try. :-)

It was so good that me and my laws polished it off and had to make again for Mr.Husband's dinner.

{Recipe} Spicy Potatoes With Kolhapuri Spice paste

Ingredients:

4 medium sized potatoes, washed, peeled and cubed.
3 bunches of spring onion, trimmed to remove roots (if any) and finely chopped leaves & white bulb as well.
(1 tbsp of kolhapuri thecha masala + 2 tbsp of olive oil) --> Mix well. Note: Reduce or increase the amount based on the spice level you can handle. I would recommend add little by little.
1 tsp olive oil
salt - to taste

Preparation:

1. Heat 1 tsp of olive oil in a flat, shallow pan and add potato cubes. Cover and cook until half done.

2. Add chopped spring onion leaves and bulb (the white part). Mix and cook for 3-4 minutes on medium-low heat.

3. Now, add the (thecha + oil) mixture and season with salt. Gently toss until potatoes are coated. Cook until done.

4. Serve with rice or roti. Tastes best when eaten hot.

Indian Spiced Peanuts | Fried Masala Peanuts

Such is the case with me too.. 

Most of the recipes featured on this blog until now are associated with a certain reminiscence of the past.
For instance, the most popular recipe is Vegetable Biryani and Mixed Vegetable Korma. These two remind me of our leisurely, late-afternoon Sunday lunches when all four of us are at home, with no pressure of homework,  watching an old classic on Doordarshan. You see, we never had cable connection until I was 18 years old as my parents thought it would distract us from our studies :-). Atleast two times a week, my mother used to make  Khara Pongal for breakfast, which is a sumptuous meal in itself and fill our tummies until lunch time.

Every weekend we used to stay back at my grandmom's house. Very often, my uncle used to get fresh khoya from a nearby doodhwala and within an hour, each of us used to devour on these delicious sweet treats, at which my ammama is a pro - Khoya balls (Kova Billalu). If craving for something spicy, we always used to fall back on some Mirchi Fritters.

I could just go on and on linking recipes from this list :-)

Today's recipe - "Spiced Peanuts" or simple said, desi-ishtyle "Fried Masala Peanuts" is one such easy recipe which falls perfectly under the "Munchies" category, for that time of the day - between lunch and dinner, when our stomachs grumble a little and crave for a spicy treat. It was just pure fun to dig our little hands into the jar and nibble on these while my mom is not watching. ;-)

Go on, make these for your loved ones too, gift them a jar-full and I promise, they will be super-duper happy!

Peanuts or Groundnuts

Spice mixture - chickpea flour, rice flour, salt, chilli powder, garam masala

Peanuts coated with spice-flour-oil mixture, ready to be fried.

Fry them until light golden. they gain a little more color once they reach room temperature.

these make an excellent gift to near and dear ones. :-)

{Recipe} Indian Spiced Peanuts  | Fried Masala Peanuts

Ingredients:

3 cups peanuts
1.5 cups besan (chickpea flour)
2 tbsp rice flour
1.5 tbsp chilli powder
1 tbsp garam masala
salt to taste
5 tbsp oil
vegetable or canola oil for frying

Preparation:

1. Dry roast peanuts. Keep aside.

2. In a large mixing bowl, add rest of ingredients with peanuts. Add water (little by little) and mix the nuts with spices so that its evenly coated with the mixture. (see pic above). It shouldn't be wet.

3. Heat oil in a kadai. Once hot, carefully drop a small batch of spiced peanuts and fry until golden brown. Drain them on paper towels (or newspaper works too!) to remove excess oil. Cool them to room temparature and then store in air tight container. Munch when you crave for some with hot tea or cool beverage on the side :-)

Variation(s) - the same recipe can be easily adapted to any kind of nuts like cashews, almonds, pistachios etc.

..or just grab some when hungry  or as snack with hot tea on side. Bliss!

Sweet Corn Sundal | Navratri Vrat | Dussehra Fasting Recipes

9 days of Navratri is synonymous to umpteen number of delicious sundals that are made in south india. From Chickpeas to Rajma to Moong dal, almost anything can be used in a sundal.

I have made some Sweet Corn Sundal for you all today. It is very simple to make, nutritious and a perfect way to break your Navratri fast. the sweetness from the corn with tempering and zing from lemon juice make it irresistibly tasty, perfect for breakfast or a mid-day snack.

Sweet Corn Sundal


Ingredients:

2 cups sweet corn kernels
2 green chillies, very finely sliced
juice of 1/2 a lemon
1 tbsp oil
few curry leaves
1/2 tsp minced ginger
a pinch of asafoetida (hing)
1/2 tsp mustard seeds
salt - to taste

Preparation:

1. Place the corn kernels in a microwave bowl, sprinkle some water on the top and microwave for 3-4 minutes.

2. Heat oil in a pan and add mustard & hing. Once they start to pop, add ginger, green chillies and curry leaves. Sauce for a minute. Finally add corn. Mix well and cook for few minutes. Season with salt.

3. Turn off the heat and add lemon juice to the sundal. Serve. Optionally, you can sprinkle some grated coconut as well.

With Love: Decadent Dairy-Free Chocolate Truffles

Friends, here I am celebrating love & compassion with you all, with some "Decadent Dairy-Free Chocolate Truffles". All you need is 1 min of prep work and these babies are ready, by the next day. If you a chocoholic or a non-chocoholic (like me), these vegan truffles are a must try and will be a big hit, anywhere and everywhere.


To Love: Decadent Dairy-Free Chocolate Truffles

How do I love thee? Let me count the ways.
I love thee to the depth and breadth and height
My soul can reach, when feeling out of sight
For the ends of Being and ideal Grace.
I love thee to the level of everyday's
Most quiet need, by sun and candle-light.
I love thee freely, as men strive for Right;
I love thee purely, as they turn from Praise.
I love thee with a passion put to use
In my old griefs, and with my childhood's faith.
I love thee with a love I seemed to lose
With my lost saints, --- I love thee with the breath,

"Chocolate Truffles" - as exotic and sensuous as they sound, the recipe to make them is even more simpler. No cooking required, No Baking required. Just melt the chocolate, chill and make the truffles...and you donot need a special day like Valentine's Day to make these. On any day made and filled love, these truffles are always welcomed :-). Enjoy.

Adapted from Vegetarian Times

Makes around 10-12 truffles, depending on the size

Ingredients:

3 oz. high-quality dark chocolate (60% cocoa), finely chopped (I used my favorite brand - Ghirardelli)
1/8 cup walnut, almond or canola oil (I used canola oil)
1/4 cup unsweetened cocoa
1/4 cup finely chopped pecans and walnuts 
1/4 cup unsweetened coconut flakes




Preparation:

1. Place chocolate, oil and 1/6 cup (8 teaspoons) of water in microwave-safe bowl. Heat on HIGH in microwave for 30 seconds. Stir. Heat 30 seconds more, or until chocolate has melted. Whisk until smooth. Cover with plastic wrap and chill 6 hours, or overnight. (I kept it overnight)

2. Place cocoa, coconut flakes and nuts on separate plates. Shape truffle mixture by heaping teaspoonfuls into small, 3/4-inch balls. Roll in cocoa or chopped nuts or coconut flakes. Chill until ready to serve.

2-minute Pineapple Dessert

First of all, this post was supposed to be for yesterday (I am cheating my publishing this on yesterday's date ;))... I couldn't publish on time as my system got malware and am still in the process of cleaning it. I have borrowed my friend's laptop.. so that I can quickly hit 'Publish'....:)

..I am so glad, finally I am able to share this easy-peasy dessert with all of you, which I learnt from one of my office colleagues, V. It has no cooking involved and trust me, the taste is mouth-watery. This is her signature dish for almost every pot-luck at our office and we eagerly wait for it, every single time. Yesterday, it was time to take the plunge & create my own. I stayed true to most of the recipe, but to add the touch of saffron was my idea. I love this queen of spices - as DK says 'the stylish and regal spice of all'..

.. do give this recipe a try and you will be pleasantly surprised with it results.. just like I did, when tasted for the first time..




2-minute Pineapple dessert (Adapted from my office colleague, V)

Ingredients:

1.5 cups (canned) crushed pineapple [in 100% pineapple juice]
1 cup fat-free condensed milk [Update: I used sweetened condensed milk]
1 cup light whipped cream
few saffron threads, dissolved in a tbsp of hot water

Preparation

In a large bowl, mix crushed pineapple, condensed milk and whipped cream. Whisk the ingredients rigoursly so that there are no lumps. Add dissolved saffron and stir well. Chill for atleast 3 hours. Serve.
